We were having a wonderful dinner with out-of-state friends this week. They happened to mention being at a restaurant once that served cranberry salsa. The light went on and recipe development was on the way!
This salsa is a great way to use whole-berry cranberry sauce that’s so abundant this time of year. It’s especially great served with fish, topping goat cheese as an appetizer, or adding to a scramble like our Sweet Potato Scramble.
1 cup whole-berry cranberry sauce (Our client-loving cranberry sauce recipe)
2 jalapeno peppers, seeded and finely chopped
1/3 cup cilantro, finely chopped
2 tablespoons red onion or shallot, finely chopped
2 tablespoons ginger, finely chopped
juice of 1 lime
Stir all ingredients together in a glass bowl.
Store, covered, in the refrigerator.
