Recipe – Garlic Parmesan Grilled Peppers

Fresh peppers are a great source of antioxidants, vitamins C and K, B vitamins, potassium and manganese. Nutrition by Nancy just tried the recipe below with some small organic gypsy peppers. You could also make it with yellow or orange bell peppers, cutting each pepper into thirds or fourths.

Ingredients: Peppers, fresh minced garlic, minced thyme, olive oil, grated Parmesan cheese, and a little freshly ground salt and pepper.

Directions: Clean and halve the peppers. Spray with a little olive oil. Sprinkle garlic and thyme inside the peppers. Sprinkle with a little salt and pepper, if desired. Grill until the peppers start to get tender. Sprinkle with the Parmesan cheese. Continue grilling until the cheese is melting and pepper edges are golden.
