Yikes! I needed a quick appetizer recipe and wanted something a little different. As I looked at what was in the refrigerator, this quick 3-ingredient recipe popped into my head. Because it was Christmas, I put it on a tree-shaped plate, but this would be fabulous on any kind of plate.
The dip/filling was made Extremely quickly. It took more time to wash, cut and stuff the peppers than it did to make the dip. If you were really short on time, you could always make a bowl of this dip, then arrange the peppers as well as some carrots, broccoli and celery around it, then let everyone dig in. Either way, here’s what went into this yummy appetizer.
Yummy Pesto-Hummus Peppers
1/3 cup classic hummus
1/3 cup basil pesto *
1/2 bag mini sweet peppers (about 3 to 4 cups)
Combine the hummus and pesto in a bowl.
Wash and dry the small peppers. Cut off the stem, then cut each pepper in half lengthwise. Remove seeds.
Stuff each pepper half with a teaspoonful of dip. Arrange on a plate. Keep chilled until ready to serve and enjoy.
